Tired of the same old tuna salad?

This recipe is anything but boring! Add your own flourishes to send it over the top!

  • 1 pound (cooked) any kind of fish (anyfish!) prepared with Kay’s Best (smoked trout shown) - crab is great as well!

  • 2 tablespoons Italian dressing (to marinate the cooked fish)

  • 1 teaspoon Old Bay Seasoning

  • 1/2 cup mayo (to reduce fat use 1/4 cup mayo and 1/4 cup fat free plain Greek yogurt)

  • 1/4 teaspoon Kay’s Best (any variety)

  • 1/4 teaspoon celery seed

  • 1/8 teaspoon dry mustard'

  • 1 dash Tabasco (I used Chipotle Tabasco)

  • 1/4 cup red onion, small dice

  • 1/4 cup celery, thinly sliced

  • 4-6 chopped hard boiled eggs (cold smoke the peeled eggs for one hour if you can - delish!)

    Directions -

Carefully comb through the fish for bones or shells. Marinate fish in Italian dressing while you prepare the rest of the recipe. Mix the mayo and spices thoroughly, add the veggies and fish. Stir until mixed. Fold in the eggs.

This makes a great sandwich! It’s also a super tasty cracker topping!
