Kay’s Best Fried Taters Recipe

  • 6 -8 Red or Russet potatoes, large shred, keep the skins on

  • 1 medium red onion, cut in half and sliced

  • 2 tablespoons oil (or bacon grease!)

  • 2 teaspoons Kay’s Best Original or Lower Salt, to taste (add Spicy for a kick!)

  • Black pepper, to taste

    Heat a large skillet over medium heat. Add oil to hot pan and then add half the taters. Sprinkle with approximately 1 teaspoon KB and some black pepper. Repeat with second layer. Stir to evenly coat taters with spice and oil. When the bottom layer turns a nice, crispy brown turn/stir with spatula to get a new layer on the bottom. Depending on your stove you may need to adjust your burner. Do this for about 30 minutes. Then add onions and sprinkle on more Kay’s and pepper. Stir in; partially cover the skillet and drop the heat. Onions will cook and the taters will finish. Another 20-30 minutes. When your taters are soft and you have browned pieces all through the skillet, they’re done!
